Preparation:

1.Remove the zest from the orange and lemon. But before removing the zest, citrus fruits must be scalded with boiling water to remove the protective layer.

2. Cottage cheese must be ground through a sieve to obtain a delicate consistency. Softened butter, put in cottage cheese along with lemon and orange zest.

3. Combine the curd mixture with sour cream, sugar, salt, vanilla, eggs, mix until smooth, first with a spoon and then with a mixer.

4. Transfer the mixture into a saucepan with a thick bottom, move it to the stove over very low heat, stirring occasionally. As soon as the first bubbles appear, turn off the heat.


The curd mass needs to be cooled, for which we put the pan on ice, and then cover it with film and put it in the refrigerator for 2 hours.

5. Let’s prepare a mold, it should either be special for Easter cottage cheese, or you can use a plastic container with holes. Cover with several layers of wet gauze and place on a plate.

6. Mix the finished mass with candied fruits, nuts, raisins and fill the bean box.

  • 1 tbsp. powdered sugar

Preparation:

1. Fill the gelatin with water and leave to swell. It is better to use instant. Proportions according to the recipe on the package.

2. To obtain a soft consistency of cottage cheese, grind it through a strainer.

3. Add sour cream, powdered sugar, a pinch of salt, cream, softened butter to the cottage cheese and mix with a mixer. At the end, add vanilla and swollen gelatin.

This recipe may be suitable for type 2 diabetics.

We need:

  • 500 gr. cottage cheese 9% or homemade
  • 100 gr. candied fruits, raisins
  • 50 gr. coconut flakes
  • 4-5 tbsp. fructose or fine brown sugar
  • 200 ml low-fat cream 10%
  • 1 tbsp. agar-agar

Preparation:

1.If the cottage cheese is grainy, grind it through a sieve.

We need:

Preparation:

1. Combine cottage cheese with softened butter, sugar and sour cream, grind with a spoon until smooth, or use a blender.

2. Divide the resulting mixture into two parts:

  • 1st, mix cottage cheese with orange zest and turmeric, mix.

  • 2nd, add poppy seed filling to the cottage cheese (see how to prepare below).

3. Cover the pasta box with gauze, lay out the curd mass with zest at the beginning, in a circle of the mold,


and then put cottage cheese with poppy seed filling in the middle, compact it.

We need:

  • 250 gr. poppy
  • 5 tbsp sugar
  • 50 gr. butter
  • 100 ml. milk

Preparation:

1. We select fresh poppy seeds so that there is no bitterness. Pour boiling water over it and leave for 10 minutes, drain the water through a sieve and repeat the process again.

2. Mix poppy seeds with sugar and grind in a meat grinder through a fine mesh, twice, or knead in a mortar until milk appears. You can also use a blender.

3. Add butter, honey and half the milk to the resulting mixture; add more if needed. We move everything into a saucepan and put it on low heat, cook it while stirring for 30 minutes.

The liquid should evaporate and the poppy seed should become paste-like.

We need:

  • 1 kg cottage cheese, not wet
  • 400 g sour cream 20-25%

Preparation:
