A unique selection of flatbread recipes from different parts of the world will not leave any lover of delicious and simple pastries indifferent. All flatbreads are good because they cook very quickly, do not require special expenses and can be used with a wide variety of dishes.

Simple flatbreads with kefir

This is the most common pancake recipe. In Ukraine, they are called “puffs” because, thanks to the interaction of kefir with soda, the dough becomes fluffy during baking, with a lot of bubbles. To prepare, you need to mix 2 cups of fermented milk with 1 tbsp. a spoonful of sugar, a pinch of salt and 0.5 tsp. spoons of soda. If desired, you can add one egg. Stir the mass and pour 600-700 grams of flour into it, kneading the soft dough. It is advisable not to fill it with flour during further steps, but to form the cakes on a greased table, rolling them into circles no more than 1 cm thick.

Fry in a frying pan: you can deep-fry or in a small amount of oil, but over medium heat so that the middle has time to fry. Donuts are so versatile that they can be used with a variety of foods: from salty and spicy to sweet.

Rye flatbreads

This recipe for kefir flatbreads made from two types of flour will appeal to lovers of yeast-free bread, as well as people who make sure that their food brings not only satiety, but also nutrients to the body. To prepare you will need:

  • 1 glass of kefir, which can be replaced with yogurt or fermented baked milk;
  • 150 grams of rye flour;
  • 60 grams of whole grain flour;
  • 2 tsp each honey and vegetable oil;
  • 0.5 tsp each salt and baking powder for dough.

Mix both types of flour with salt and baking powder. In a separate bowl, combine honey, butter and kefir, stir until dissolved and pour the liquid into the flour, kneading the dough with a spoon. It will not look like the usual lump of dough, but will be sticky and viscous. Leave it alone for about twenty minutes, and then with your hands greased with oil, take half the dough and form a cake on a baking sheet lined with parchment.

Do the same with the second part of the dough, but there is no need to knead it, as it should remain airy and light. They are baked until ready and can be used as food while still hot.

Bhaturi

Another recipe for flatbreads in a kefir pan comes from sunny India. In this country they are well versed in flatbreads, as they form a large part of the diet of the poorest sections of the population. Elementary preparation: sift 400 grams of wheat flour and mix with 1 tsp. soda and the same amount of salt, add a spoonful of sugar and pour in 1.5 cups of yogurt, stirring the mixture with a spoon and then with your hands. It is advisable not to add more flour, it is better to grease the table and hands with oil and try to knead a soft, slightly sticky dough. Divide into 12-14 pieces, which are rolled into balls and rolled out with a rolling pin into flat cakes 2 cm thick. Next, you need to heat the vegetable oil in a frying pan. Sprinkle each flatbread with 1 tsp. black sesame, distributing it evenly in a circle, and roll it out to a thickness of 1 cm with a rolling pin, pressing the grains into the dough. Fry in a frying pan until golden brown, turning with a spatula. Airy, light bhaturi is delicious even the next day, although it is usually eaten within the first half hour.

Indian flatbread chapati

This recipe (with photo) for flatbreads also comes from India. Chapati is a traditional everyday bread that is loved by vegans because it contains no animal products. They eat everything with it: from curry (rice with spices and vegetables) to sweet fruit fillings. And this is very convenient, because when baking, the dough is inflated, forming a “pocket” in which food is placed, and is wrapped into a roll, so you can eat it anywhere.

To prepare, boil a glass of water with 1 tsp. salt and, stirring vigorously, pour two cups of flour into it. Knead until smooth and add the same amount of flour, kneading the dough already on the table. Wrap it in plastic for an hour or two, and then divide it into small pieces, roll each one very thin (no more than 2-3 mm) and bake in a dry frying pan, covering with a lid. Be careful: the cakes bake very quickly, so don’t leave the stove for too long!

Brother from Mexico: recipe with photos

Pan tortillas, prepared in a similar way from corn flour, are very popular in temperamental Mexico. There they are wrapped in stewed beans, salsa (fresh vegetable salad with hot sauce) or simply dipped in syrup and eaten. Pour half a glass of wheat flour into a glass of boiling water with a large pinch of salt and mix thoroughly so that there are no lumps. This type of flour is a binding link, since corn flour has poor elasticity. Next, add 1.5 cups of corn flour to the still hot dough and stir until smooth.

The dough will crumble slightly - this is normal, so it is better to roll it into a flat cake between two layers of parchment. Thickness - no more than 5 mm, otherwise they will not bake well. Use a dry frying pan and heat below medium. You can also bake the scones in the oven, they will be absolutely gorgeous, but you don't need to brown them - just a light blush.

Taftan - Iranian brother of lavash

Despite the fact that the flatbread recipe contains yeast, taftan is considered a close relative of Armenian lavash and Mexican tortilla. To prepare you need:

  • three incomplete glasses of wheat flour;
  • a spoon (teaspoon) of sugar and yeast;
  • 200 ml water;
  • a large spoonful of olive oil and black sesame seeds;
  • salt to taste.

The water must be warm for the yeast to start growing. Mix all the ingredients, kneading a light dough, which must be thoroughly kneaded on the table for at least eight minutes, then cover it in a bowl with a towel and leave in a warm place for an hour. After the time has passed, grease your hands and table with vegetable oil, knead the dough and divide it into ten parts, roll each of them into a thin flat cake, no more than 2 mm in thickness, sprinkle with sesame seeds and roll over again.

Iranian flatbreads are baked in a dry frying pan, preferably covered, and the heat should be set to medium, as they bake almost instantly. It is convenient to wrap salads, meat dishes or sliced cheese with spices in taftan and eat while still warm.

Shelpek

These Kazakh flatbreads made from yeast dough are prepared for major religious holidays, as well as funerals or weddings, and each clan has its own special way of preparing shelpek, which is passed on from generation to generation. At the same time, there is a recipe for flatbreads, which are a local type of bread:

Sift 500 grams of flour through a sieve and mix with 1/3 tsp. soda, quenched with vinegar, and the same amount of salt. Mix a glass of warm milk with 2 tbsp. l. melted butter and pour into the flour, stirring with a spoon. Knead the dough and knead it thoroughly on the table until it becomes smooth and elastic. Cover with a towel and leave for half an hour, then divide into seven parts and roll each into a very thin cake, which is deep-fried. Ready-made shelpeks are eaten dipped in sauces, jams and honey, or food is wrapped in them, like in pita bread.

Jewish flatbread with coriander

This recipe for flatbreads in the oven is good because it does not require any special ingredients, and the taste is so stunning that you can only be surprised.

Yeast dough is prepared from a glass of water mixed with 4 tbsp. l. kefir, sour cream or yogurt, 1 tbsp. l. sugar and the same amount of dry yeast. You should also add a pinch of salt. When the yeast is activated, add about 500 grams of flour or a little more, knead the dough and leave it warm for an hour to rise. Grate 300 grams of hard unsalted cheese and mix into the dough, then roll it out 1 cm thick and cut out circles with a saucer, brush each with beaten egg and sprinkle with ground coriander. Bake in the oven until done at 160 degrees and wrap hot in a cloth. Then they will become soft and retain freshness for a long time.

Moldavian placindas

These are cooked in a completely dry frying pan, which Moldavian shepherds took with them for lunch. Placindas are good because they do not go stale on the second or even third day. If you put them in the pan for half a minute, they become again as fragrant as the day they were cooked. The recipe for flatbreads is completely simple: unleavened dough is made from 1 glass of water, a pinch of salt and 500 grams of flour, with an additional 1-2 tbsp added to the dough. l. oils for elasticity.

Their filling is also very ordinary: boiled and mashed potatoes are mixed with a large amount of chopped dill and parsley, salt and black pepper are also added to taste. The dough is divided into small flat cakes; 2 tbsp is placed in the middle of each. l. filling, pinch the edges into the center, forming a circle. Next, carefully roll out the flatbread with a rolling pin to a thickness of 1 cm and fry in a dry cast-iron frying pan until golden brown. The finished placintas need to be wrapped in a linen towel and allowed to cool there, although they are very tasty hot.

  • sparkling mineral water (can be replaced with regular table water) – 1 tbsp;
  • wheat flour – 2 full glasses;
  • vegetable oil – 2-3 tbsp;
  • salt, sugar - one and a half tablespoons;

Cooking:
1. Mix mineral water with oil, add bulk ingredients, except flour.
2. Sift the flour and add it to the water-oil base gradually, stirring the mixture with a whisk.
3. Make a thick dough that does not stick to your hands, divide it into equal parts-lumps.
4. Roll out each lump as thinly as possible and fry on each side for 3-5 minutes.

Tip: dilute the bland taste of water flatbreads with a variety of fillings. The most delicious options:
mushrooms fried with onions;

Place the filling on a thinly rolled out layer of dough, pinch it into a “bag” and again roll it out thinly along the diameter of the frying pan.

Recipes for flatbreads in a frying pan with milk and sour cream

Full-fat milk and sour cream make such flatbreads that you'll lick your fingers! For a family of three, we offer the following version of flatbreads with milk, which is called "Mingrelian khachapuri" :

  • warm water - a little more than half a glass;
  • dry yeast – 2 tsp;
  • one egg;
  • butter – 50 g;
  • salt – 1 teaspoon;
  • sugar – 2 tsp;
  • flour – 2 tbsp;
  • suluguni cheese or cheddar – 0.5 kg.

Cooking:
1. To prepare the dough, heat the water a little.
2. Add sugar, mix, add dry yeast, wrap the bowl with cling film and leave to rest for half an hour.
3. Lightly heat the milk and heat the butter in the microwave.
4. Sift the flour into a bowl, add salt, beat in the egg and add butter.
5. Combine the dough with the flour mixture and knead the dough, working with it for 10 minutes until good elasticity is achieved.
6. Grease the finished dough with vegetable oil and leave to “grow” for a couple of hours.
7. While the dough is rising, grate cheese on a coarse grater (300 g for filling, 200 for topping).
8. When the dough has risen, divide it into 3 parts, roll out each and generously sprinkle with cheese filling. Pinch and roll out, turning seam side down.
9. If air has collected inside the dough, pierce it in several places with a fork. Fry the flatbread for 5 minutes on each side, or bake in the oven for 10 minutes.
10. Sprinkle the finished hot flatbreads with grated cheese, which immediately melts, forming an appetizing crust.

Why is this recipe called quick? Yes, you have to tinker with the initial version of the test. But it can be prepared in larger proportions, and the leftovers can be hidden in the freezer. This dough does not lose its taste when frozen. Therefore, when you need to quickly prepare a treat, simply take the semi-finished product out of the refrigerator, fill it with cheese, fry it and serve the aromatic, fresh pastries to your guests!

The recipe for homemade flatbreads is similar to the one my grandmother used to cook in the village. When I eat my baked goods, my carefree childhood, delicious pies and fresh milk immediately come to mind. Now I often spoil my children with homemade flatbreads. You only need 5 ingredients and a little work with your hands while kneading the dough. So, let's prepare flatbreads at home.

Ingredients:

  • 800 milliliters of milk;
  • 100-150 grams of butter or margarine;
  • 1.5 teaspoons salt;
  • flour (about 3-4 cups);
  • sesame seeds for decoration.

Each time a different amount of flour is used, so it is difficult to say exactly how much it will be needed. It all depends on how the dough behaves. I add flour gradually until the dough becomes elastic (but not hard).

The most delicious homemade flatbreads. Step-by-step preparation

  1. We start by heating the milk. It should become slightly warm. Pour it into a deep container.
  2. Next, to prepare the flatbreads step by step, you need to melt the butter in a water bath. Cool it a little and add it to the milk. Mix.
  3. Add a little flour. Knead the dough with your hands. Add enough flour to make the dough elastic. The final amount of flour depends on how much of the remaining ingredients for homemade cakes were initially added. Knead the dough until it becomes smooth. Form a ball.
  4. Next, you need to cover the container with the dough and place it in a warm place. It should rise. It will take 2 hours.
  5. Next, the step-by-step scone recipe calls for dividing the dough into several pieces. I usually cut it into 4 pieces with a knife. How many parts you make, the number of cakes you will get.
  6. Sprinkle the table with flour. Place the dough on it. Form each piece into a ball. Cover the dough with a towel and let it rest for another 15-20 minutes.
  7. We form flat cakes from each ball. Now the dough has increased in size and has become soft, so it will be easy to roll out. I do it with my hands. I just press down in the middle with my fingers and slowly stretch the dough. As a result, the cakes should be thick (2-3 cm).
  8. Now we prepare the form. Lubricate it with oil. We put the cake in the mold and continue to shape it there. I make a depression in the middle with my fingers so that the edges are higher (like in sour cream).
  9. To prevent the dough from swelling, make frequent punctures in the middle with a fork.
  10. Moisten the center of the flatbread with a little water and sprinkle with sesame seeds. I sometimes use flax seed as it is very beneficial.
  11. Preheat the oven to 200 degrees. We bake our creation until golden brown. This is approximately 20 minutes. Periodically spray the center with cold water. When the pastry is ready, brush the top with melted butter.

That's the whole simple recipe for flatbreads. The baked goods turn out very tasty, and the butter adds a special delicate note. I bake this food for my children to take to school as a snack. My husband and I also like to eat homemade baked goods with an omelet in the morning. People often ask me how to make delicious flatbreads. I’m sharing my secret for the first time. Try it!
