I salt the fish myself, so I start making rolls the day before. I cut red fish (trout, salmon) into steaks.

I will share with you a secret. Red fish is an expensive pleasure, and fillets or steaks from it are even more so, so I take a whole fish at the wholesale market, divide it into portions and send it to the freezer, there are enough such blanks for almost the whole year.
