There are many different types of baked goods with strawberries: cakes, dumplings, pies, pastries, pancakes. Especially quick and just as easy to prepare. Strawberries are bright, juicy, sweet and sour and complement the sweet taste of desserts well. At first I wanted to make a pie with strawberries and sour cream (well, pour over the berries and bake), but then I settled on the sponge version. This is a variation of charlotte, but with strawberries.

How to make strawberry sponge cake?

  • 3 eggs;
  • 1 tbsp. Sahara;
  • 100 g soft butter;
  • vanilla sugar;
  • flour – 1.5 cups;
  • 1 tsp baking powder;
  • strawberries - approximately 250 g.

As you can see, there is a minimum of ingredients, do not forget to take them out of the refrigerator an hour before use, then the components mix better when they are all at the same temperature. The dough is as easy to prepare as making strawberry pie, that's how I made it.

I prepared a pie pan, lined the bottom with baking parchment, but you can simply grease the bottom of the pan with butter and sprinkle with flour. Experienced confectioners advise not to grease the sides so that the cakes are even and do not bubble up in the middle. I still slightly smeared the edges, I was afraid that it would stick. I have an old mold with a diameter of 24 cm, so the cake will not be very high and will bake evenly.

She laid out the dough, or rather poured it out and smoothed it out. The dough turned out to be not very liquid, almost the same as for. I placed washed strawberries on top, the berries drowned, but I really wanted it to be beautiful.


Bake in the oven for about 35 minutes at 180°C. Readiness is checked using the “match” method as usual. Then I waited about 10 minutes until the strawberry pie cooled down a little, but it was not easy. The aroma of vanilla mixed with strawberry, and I really wanted to try it quickly.

It’s a pity that there were no strawberries left for decoration; I sprinkled them with powdered sugar. That’s really almost how it turned out.

I note that this quick pie can be made with frozen strawberries, but do not defrost them.

Shortcrust pastry pie with strawberries

1. Prepare the dough: mix flour, salt and sugar, add butter and rub with your fingers until the mass resembles crumbs. Add yolk and water. Gather the dough into a ball. Wrap in cling film and refrigerate for at least 1 hour.
2. Grease the mold with butter and sprinkle with flour. On a floured work surface, roll out the dough to a diameter slightly larger than the diameter of the pan. Transfer the dough to the pan and press evenly onto the bottom and sides. Roll with a rolling pin along the edges of the pan, trim off excess dough. Prick the bottom with a fork. Bake for 20 - 30 minutes at 180 C. Allow the base to cool completely.
3. Prepare the cream: heat 400 ml of milk in a small saucepan with a vanilla pod, without bringing to a boil. In a bowl, beat the egg yolks and sugar until smooth and pale. Mix the flour and starch and add to the egg mixture, stir, then add the remaining 100 ml of cold milk and beat well again. Remove the vanilla pod from the warm milk. Add the yolk mixture to the pan with the milk and mix well with a whisk. Place the pan over low heat, cook, stirring constantly for 6 - 8 minutes, until the mixture thickens. Remove the pan from the heat and let the cream cool completely.
4. Fill the prepared base with cream, lay out the berries, and spread the jam on top of the berries. You can serve! Bon appetit.

Strawberry cupcake

4.Bake for 45 to 50 minutes, or until a toothpick comes out clean from the center. Let cool in pan for 10 minutes. Remove from pan and let cool completely.

Strawberry and rhubarb pie

Prepare the dough.

Mix flour, sugar, 1 tsp in the bowl of a mixer or processor. salt. Add butter (250 g), cut into pieces, and grind into crumbs in a processor. Pour in water and knead the dough (if it crumbles, add more ice water). Make one big ball and one smaller one. Wrap the dough in film and put it in the refrigerator for 1 hour.

Roll out one ball of dough into a thin layer on a floured surface. Place the dough in a baking dish, spread over the bottom and sides, and place in the refrigerator for 15 minutes. Then cover the dough with baking paper, sprinkle peas or beans on top and bake the base in the oven for about 15 minutes. Then remove the paper and remove the beans.

Prepare the filling.

Mix chopped rhubarb, strawberries, sugar, starch, zest, juice, and a pinch of salt.

Roll out the remaining dough into a thin layer and cut into 15-16 long strips 1-1.5 cm wide using a pastry cutter.

Place the filling into the prepared base and sprinkle 2 tbsp on top. finely chopped butter. Place in the refrigerator again for 15 minutes. Remove the pie from the refrigerator and place 8 pastry strips on top. Place the rest nicely on them to form a lattice. Brush the grate with beaten egg.

Bake the cake for 40 minutes on the middle shelf of the oven at 180 C degrees. It is better to place the form on a baking sheet in case the juice leaks out. Cool the finished pie slightly and sprinkle with powdered sugar.

Strawberry almond pie

1. Prepare almond crumbs for the top of the pie. Grind almonds in a food processor until crumbly. In a bowl, mix flour, almonds, sugar, cold butter, grated. Knead with your hands until the entire mixture resembles crumbs. Place in the refrigerator.
2.Meanwhile, prepare the dough: mix butter with sugar, add eggs one at a time. Mix flour with baking powder and add to butter and eggs, mix until smooth. Pour the mixture into a greased and floured mold and smooth it out.
3. Heat the oven to 180 ° C. Wash and peel the strawberries, cut the berries into small pieces and place in a saucepan with a spoon of butter and a spoon of sugar. Cook for a few minutes.
4.Place the finished strawberries on top of the pie, sprinkle with the next layer of almond crumbs to cover all the berries.
5.Bake at 350°F for about 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Let cool completely before serving; you can sprinkle the top with powdered sugar.

Tart with strawberry mousse

Ingredients

375 ml whipping cream (30-36%)
500 g strawberries (250 g for mousse + 250 g for decoration)

1 sachet of gelatin (7g or 2 tsp)

1.Roll out the shortcrust pastry and place in a tart pan. Prick lightly with a fork and bake in an oven preheated to 180C for 15-20 minutes (until browned). Remove and cool completely. It is better to bake the base in advance, you can even bake it the night before.
2.Soak gelatin with 3 tbsp. cold water in a metal bowl (so you can put it on the stove later). Leave for 5-10 minutes.
3.Whip the cream into stiff foam.
4. Blend strawberries (250g) with sugar in a blender until the sugar is completely dissolved.
5. Place the gelatin over low heat and heat until it melts (the mixture becomes liquid and homogeneous). Do not bring to a boil or heat for too long! Remove from heat immediately.
6.Pour strawberry puree and gelatin into the whipped cream (cool slightly) in parts, carefully stirring with a spatula so as not to reduce the volume. When the mixture becomes a uniform color, transfer to the baked base.
7.Place in the refrigerator for 30 minutes until the mousse hardens. Decorate the top with strawberries - you can simply lay halves or slices of strawberries over the entire surface, or cut each berry into a fan.

Shortcrust pastry for the base

200 g flour (1.5 cups), 100 g cold butter or margarine, 2 tbsp. sugar, 1 yolk, 2 tbsp. cold water. Quickly grate the cold butter, grind with flour and sugar until crumbly, add 1 yolk and 2 tbsp. water, gather the dough into a ball. It's even faster to make the dough in a food processor - add the diced butter with flour and sugar, turn until it forms coarse crumbs, then add the rest of the ingredients.

Frozen strawberry cupcake

Ingredients

3.Place the dough in a greased pan (small round or for bread) and bake at 180 C for 40-45 minutes, until a toothpick comes out clean from the center.

Cupcakes with strawberries

3.Fill the molds with dough. Bake at 350 degrees F for 25 minutes, or until the tops spring back when touched. Let cool 10 minutes and remove from pans.

Strawberry roll

1. Beat 2 eggs and 1 white with sugar and vanilla for 5 minutes at high speed until the mass is whitish and increases in volume.
2.Then add flour and baking powder. Mix well.
3.Pour onto a greased rectangular baking sheet. The thinner the layer, the better the roll.
4.Bake at 200 C degrees for about 10 minutes.
5.Remove the baking sheet, carefully pry up the edges, turn the baking sheet over and remove the layer.
6.Carefully roll into a roll, layer with parchment paper (so that it takes the correct shape when it cools) and cover with a towel.
7.Whip 2 egg whites and half a glass of sugar in a water bath until thickened - about 10 minutes.
8.Slice the strawberries crosswise into thin slices.
9.Unroll the roll, coat it with cream and place strawberries on top.
10.Roll the roll again. Sprinkle powdered sugar on top.

Advice

To make the roll more moist, strawberries can be lightly fried with 1 tbsp. butter and 2 tbsp. Sahara. Fry over high heat. Then distribute the strawberries and juice over the roll and then put the protein cream on top.

Strawberry muffins with cottage cheese

Ingredients

5. Coat the finished sponge cake with berry syrup and place strawberry pieces on top.
6.Whip the cream with sugar.

300 g butter
1 cup powdered sugar

1. Preheat the oven to 180 degrees C.
2. Prepare the dough: separate the whites from the yolks. Beat the whites with sugar until stiff peaks form. Beat the yolks separately. Gently mix the whites with the yolks. Then, stirring gently, add little by little flour and starch mixed with baking powder and vinegar.
3.Pour into a 29x35cm tin lined with baking paper.
4.Remove the hot cake from the oven, roll it into a roll (you can do it together with paper - it’s easier, and remove the paper after it cools down), wrap the roll in a towel. Wait until it cools down.
5.Prepare the filling: puree the strawberries in a blender. Beat butter with powdered sugar and strawberries.
6.Unroll the cooled cake and spread with strawberry filling.
7.Roll the roll again and place it, seam side down, in a cool place for about an hour. Then sprinkle powdered sugar on top.

Strawberry Crumble Pie

1 kg strawberries

1 cup sugar (preferably brown)
200 g butter, softened

1.Chop the strawberries and mix with 3 tablespoons of sugar and starch. Place in a large pan in which you will bake the crumble.
2.In another bowl, mix flour, oatmeal or rolled oats and sugar, add softened butter and mix with your hands until the mass resembles crumbs. Sprinkle the batter over the strawberries and place the pie in the oven.
3.Bake for 45 - 50 minutes in an oven preheated to 180 C until the top is golden brown.
4.Serve strawberry crumble pie warm with whipped cream.

Advice

You can also use frozen strawberries for the filling, which makes the filling even juicier.

Strawberry Pie with Streusel Crumbs

2.Take out the dough, roll it out into a layer 3 mm thick, and place it in the mold. Prick the bottom of the dough with a fork and trim the edges.

3.Place baking paper and weight (rice or dry beans) on top. Bake for 15 minutes at 160 C. Remove the mold, remove the weight and dry the dough for another 5 minutes at the same temperature in the oven. Remove the form with the dough and cool.
4. Prepare nut cream: combine all the ingredients for nut cream, fill the mold with cream. Bake for 10 minutes at 190 C.

5. Prepare strawberry cream: grind 600 g of strawberries in a blender and rub through a sieve.
6.Combine the yolks with powdered sugar and two spoons of puree. Boil the bulk of the puree and pour in the yolk-starch mixture in a stream. Cook until thickened, then cool.

1. Sift flour onto a work surface, sprinkle with sugar and salt and make a well in the middle of the flour. Place the butter, cut into pieces, and the yolks into this cavity. Knead the dough quickly so that there are no lumps. Wrap in foil and place in a cool place for an hour.
2.Lightly grease the pan. Roll out the dough thinly on a floured work surface and line the pan.
3. Preheat the oven to 190° C. Place the pan in the oven and bake until golden brown, about 20 minutes. Then cool on a wire rack. Carefully remove from the pan and place on a plate.
4. Rub the cottage cheese through a sieve, mix with honey and orange zest. Gently spread this curd mixture onto the crust and level it out.

1. Preheat the oven to 160° C. Grease the sides of the pan with oil and line the bottom with baking paper.
2. Crumble the cookies (put them in a plastic bag, close them and roll them with a rolling pin). Spread the cookie crumbs evenly over the bottom of the pan and set it aside.
3. Separate the yolks from the egg whites. Beat the yolks into a homogeneous mass with cottage cheese, sugar, vanilla sugar, orange zest and cream. Sift the flour and mix again.
4.Whip the egg whites with salt into a thick foam and, using a large whisk, carefully fold into the curd mass. Then fill the mold with this mixture, being careful not to damage the crumb layer. Level the surface.
5.Bake the cottage cheese pie for about an hour until it rises and turns golden brown. Turn off the stove, but leave the pie in the oven for another 15 minutes until fully cooked.

1.Crush a pack of dry jelly so that there are no lumps, add flour and soda. Add eggs one at a time and mix.
2.Cut half the strawberries into cubes, roll in flour and add to the dough, mix. Pour the dough into a greased form and place in an oven preheated to 180 C for 25 - 30 minutes.
3. Cool the finished pie and remove from the mold. Cut the remaining strawberries into thin slices, place on top and pour over the jelly (jelly is prepared according to the instructions on the package). Let the jelly harden, then serve.

Cupcake with pureed strawberries

1. Mash (or grate) strawberries with sugar.
2. Mix flour, salt, baking powder, cold milk and melted butter. After beating the mixture with a mixer at medium speed, add the eggs, while increasing the beating speed.
3. Carefully add the strawberry mixture to the mixture and mix lightly. Pour everything into a metal cake pan. Place in the oven preheated to 180 degrees. Place the rack in the center of the oven.
4.Bake for about 65 minutes, check the readiness of the cake with a wooden stick or toothpick, and then leave on a wire rack to cool for another 20 minutes. Cool completely on wax paper, after which the cake should be easily removed from the pan.
